A Frankenstyle hybrid of a number of other recipes I've seen, modified to be diet-friendly.

Fruit bran muffins

1 cup bran flakes
1 cup All BranTM cereal
1 1/2 cups Simply SmartTM nonfat milk
 
1/2 cup flour
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 cup SplendaTM
 
1/4 cup grated carrot
2 oz chopped figs (about 4 figs)
 
1/2 cup unsweetened applesauce
1/2 cup Egg BeatersTM
2 tbsp strawberry Polaner All-FruitTM

Step 1: Preheat oven to 400 degrees F. Put cereals in one bowl and pour milk over them. Let that sit while you do the rest.
Step 2: Mix dry ingredients in a larger bowl. Then mix in chunky ingredients. Then mix in wet and sticky ingredients. Then mix in cereals and milk.
Step 3: Line muffin tin with muffin cups. Spoon into muffin cups. Bake for 25 minutes.

Makes one dozen muffins. They're a bit more than two ounces apiece, and each has about 85 calories, 0.5g of fat and 4.5g of fiber
